Glazed Salmon w/ Rice

by Nikhil in

The Mrs. grew up eating fish regularly. I was raised in a vegetarian household and thus never had fish at home. Without a doubt, seafood is one of the hardest dishes for me to make. The most challenging aspect/the biggest lesson learned was how much salt/pepper was needed to season the fish.

Ingredients:

1/4 cup brown sugar
2 tablespoons low-sodium soy sauce
1 cup long-grain white rice
4 pieces skinless salmon fillet (1 1/4 pounds total)
1 large red onion, cut into 1/4-inch-thick wedges
1 tablespoon olive oil
kosher salt and black pepper

Instructions:

Heat broiler. In a small bowl, combine the sugar and soy sauce. Set aside.
Cook the rice in a rice cooker.
Meanwhile, place the salmon and onion on a rimmed baking sheet. Drizzle with the oil and season with ½ teaspoon salt and ¼ teaspoon pepper.
Broil until the salmon is opaque throughout, 8 to 10 minutes, spooning half the soy sauce glaze over the fish during the last 2 minutes of cooking.
Serve the salmon and onion with the rice and the remaining glaze.

Strawberry Nutella Muffins

by Nikhil in

The Mrs. likes nutella and strawberries so I had my eye on this for a while.

Muffin batter was so much different than cupcake batter (much thicker).

Overall, a fun experience. Definitely recommend the recipe!

Ingredients:

1 1/2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup sugar
1/4 cup canola oil
1 large egg
1/3 cup buttermilk
1 teaspoon vanilla extract
1 cup chopped fresh strawberries
1/3 cup Nutella

Instructions:

1. Preheat oven to 350 degrees. Use a muffin or cupcake tray and place the baking cups inside.

2. In a bowl, whisk together the flour, salt, baking powder, and sugar.

3. In a bowl, combine canola oil, egg, buttermilk, and vanilla together. Use a fork or whisk and mix until well combined.

5. Incorporate the wet ingredients into flour mixture. Add slowly and gently stir, you don’t want to over mix. The batter will be thick. Carefully fold in the strawberries.

6. Fill each muffin cup half way with batter. Next, add a small spoonful of Nutella to each muffin cup. Cover the Nutella filling with the remaining batter.

7. Bake muffins for 17-20 minutes, or until a toothpick comes out clean. Remove the muffins from the pan and let cool on a cooling rack.

The original recipe called for turbinado sugar. I didn't have it, so I skipped it.

Hello World!

Hi Everyone!

My name is Nikhil and I've been cooking for about 3 years. When I was single, my friends used to joke around saying I should create a website with all my food creations to find that special someone.

As fate would have it, I found my special someone and got married. I thought back on the jokes and decided to go with it.

Here is my blog where I show various food creations that I make for the love of my life.
